The first thing to be fully explained to me and to simultaneously grab my attention was Nocino, a dark brown, rich and bitterly pungent Digestive that I love. Made from smashed under ripened walnuts (specifically picked on June 24th), Cinnamon, Cloves, Sugar, Water, Lemon Peel and pure Alcohol, it rests for 40 days before its filtration begins. More than just the end result I learned my first lesson here on the farm; plan in advance, think seasonally and when possible “make on premise”.
