I had it wrong all along...

Anyone who has been to my house knows that I am forever grilling Vegetables. It’s a trademark of sorts; a chance to please vegetarians with actual variety and quantity, experiment with new vegetables and prepare in advance for large groups. And to my credit they always tasted great, but...


I now have the secret to the best damn grilled vegetables I have ever tasted. Deal is...DON'T MARINATE before grilling!


The perfect grilled Eggplant:

First, grill the Vegetables using no Salt, Olive oil etc. Once cooled, begin the process of layering in a plastic tub with Olive oil coating the base. After you have places one layer add dried Oregano, sliced Garlic, fresh Mint, Salt, White Wine Vinegar and a generous amount of good if not great Olive Oil. Then proceed with the second layer, repeating the process, generously applying the love. Once you have finished, healthily pour additional Olive Oil on top. Each layer is now technically "marinated". But why so special...


Firstly, these will keep considerably longer than if you had marinated them prior to grilling. In this instance you are dealing with all fresh ingredients so they don’t go bad in the same way that grilled garlic, lemon rind, dried herbs etc would. Secondly, they will only get better as the day and/or week progresses. All the flavors will unite while simmering in fresh olive oil in the refrigerator.

To be clear, I have not tried this with my usual array of season treats (only Zucchini and Melanzana). I do not know firsthand if Porcini, Fennel, Asparagus, Radicchio or Peppers will work with the Mint, but everything I am learning is about understanding templates and science. Adjust as you see fit. Basil, Tarragon, Parsley, Lavender, dried herbs...do you!

OK - let the real food learning begin - you're about to have your culinary world flipped by everything you're experiencing on that incredible farm. I mean, if your grilling techniques have been improved upon...
there's no telling how much knowledge these old world masters are going to pass onto you... Just be sure you make it back to BK so we can all reap the benefits!

As a fellow grilled veggie fanatic, I'm going to have to try this...
