simplicity


Today was a simple day. I got a haircut from the local barbiere, layed out on the beach, plucked fresh basil leaves, prepared Tomato sauce for a wedding Friday and cooked dinner as usual. However even the slowest nights in the kitchen are succulent and inspiring. As my time winds down on the farm I continue to breathe it all in. Here are the highlights of dinner for 30 ospiti.


Provola afumicata (whole smoked Mozzarella)- served solo.



Pancetta – sliced thin, its lard creamy with a hint of smoked pepper from its crust.


Zuppa di fiorilli di Zucchinni and Potato – self explanatory, but one of our best dishes! Even better topped with Parmesan...
